Derek Webster, 31, from Comely Bank, is director of Juice Almighty in Castle Street.
What is your earliest childhood memory of Edinburgh? My earliest memory was when my family visited for the day during the Festival when I must have been about ten years old. My dad and I managed to join in the Festival parade along Princes Street –
I have no idea how but it was a hoot!

What are your memories of school? For some reason I mainly remember the food at Gourock High School. There were plenty of hot dogs and chips, fish and chips, and pie, beans and chips. I don't recall many apples on offer.

Where is your favourite place in Edinburgh and why? Stockbridge is my favourite place in Edinburgh. It is great for walking the dog and hanging out. I also love the top of Arthur's Seat for the outdoor escape which is right on our doorstep – a work of genius.

What are the best things about Edinburgh? It's a beautiful place to live and has lots to see and do. I also love all the open spaces.

What would you change about the city? I would definitely change the traffic. There are confused bus lane priorities and there really is far too much car access. Hopefully the new tram system will be given right of way over both and we will really start to see the city getting the transport infrastructure it deserves.

Describe a perfect Edinburgh day/night out. Taking the dog for a walk up Arthur's Seat in the morning, lunch in Hector's in Deanhaugh Street (they let dogs in), followed by a visit to the National Museum, then a curry from Kebab Mahal in Nicolson Square for dinner, and I would round off the day by having drinks with friends in the Pear Tree beer garden.

Which sports interest you? I'm keen on most sports but my main interests are football, off-road running, surfing, tennis and the occasional game of pool.

What was your most embarrassing moment? I was once beaten 9-0 in a game of pool by one of my best friends. He has never let me live it down and to this day he rubs it in at every opportunity.

What is your greatest achievement? My greatest achievement has been starting up my own business and not compromising my vision along the way.

Sum up Edinburgh in three words. Hibs. Hearts. Rugby.
